Double Chocolate Energy Bites

These homemade double chocolate energy bites are an easy (and deliciously satisfying) way to level up your healthy snacking game.

Ingredients
  

  • 3 medjool dates, pitted
  • 1 cup quick cooking oats Option to pulse in a food processor to turn into a flour
  • 2 tbsp chia seeds
  • 1/4 cup cacao or cocoa powder I also love using chocolate collagen peptides for more protein
  • 1/3 cup cashew butter You can use any nut or seed butter
  • 2 tbsp cacao nibs
  • 2-4 tbsp water
  • 1 tsp vanilla extract
  • Pinch ground cinnamon

Instructions
 

  • Soak dates in a small bowl of very hot water for about 10 minutes to soften. Remove from water and add to a large mixing bowl, along with about 2 tablespoons of the soaking water, then use a fork to mash into a paste.
  • Add all remaining ingredients to the mixing bowl and use a rubber spatula to mix everything together until well incorporated. If mixture is too wet, add in more oats; if it's too dry, add in more water 1-2 tablespoons at a time.
  • Store batter in the fridge for 15-20 minutes to slightly harden (this is optional, but makes it easier/cleaner to roll into balls), then remove from fridge and use hands to roll into ~1" bites.
  • Store in an air-tight container in the fridge for up to 2 weeks.
