Chocolate Chip Banana Bread

The easiest, tastiest gluten free and dairy free chocolate chip banana bread!

Ingredients
  

  • 2-3 ripe bananas, mashed
  • 2 eggs
  • 1/2 cup peanut butter (or alternative)
  • 1 tsp almond extract (sub vanilla)
  • 1 cup GF 1:1 baking flour I used Bob's Red Mill
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1/3 cup chocolate chips Use Enjoy Life Foods for DF

Instructions
 

  • Preheat oven to 350F and line a loaf pan with parchment paper (it helps to crinkle it up first).
  • Mix wet ingredients together. Gently fold in dry ingredients until just combined.
  • Pour batter into loaf pan, sprinkle additional chocolate chips, then transfer to oven to bake for 50-55 minutes or until a toothpick comes out clean.
  • Allow to cool (the hardest part, I KNOW) prior to slicing….then ENJOY!
