No-Bake Chocolate Peanut Butter Quinoa Cookies, need I say more? I’ve really been on a ROLL with the recipes right now though, haven’t I?? Blame it all on the fact that I’ve had a little extra free time during the community rotation portion of my internship. Having worked in WIC last year, I was able to get some “credit” for half of my community nutrition rotation. Since I don’t have a placement to be at just yet, I’ve been spending my time either working on other internship assignments orrrrr cooking and baking up a STORM in the kitchen to share more awesome recipes with y’all! 

I’ve loved that I’ve had the opportunity to engage in some deeper and more constant interaction with so many of y’all over the last month on instagram. It brings me such joy to hear and see that y’all are enjoying what I post and finding ideas that you want to try to recreate on your own – that’s the whole reason I do this! I’d like to tell myself that this is serving as a portion of my community rotation, but I don’t get credit for it at all…I’m simply doing it out of the kindness of my heart, and because I genuinely enjoy creating new content and engaging with y’all — all 22,000 of you crazy people!!!

Seriously, twenty two thousand want to see what I’m eating day in and day out? The thought is actually crazy insane, but extremely humbling. While the growing numbers are motivating and I won’t lie, SO exciting, I still get just as excited knowing that I have positively impacted just one person’s quest to eat healthier. I pray that the Lord continues to use this outlet as a vessel for me to encourage others to nourish their bodies with healthy, wholesome, and delicious foods, and to take care of the temple that the good Lord blessed ’em with!

So, we covered the “22,000” portion of the blog post title, but what are those chocolate peanut butter quinoa cookies you’re talking about??? Well. Let me just TELLLLL you about them.

Chewy, chocolatey, crispy, mouthwatering nuggets of scrumptiousness.
No-Bake Chocolate Peanut Butter Quinoa Cookies, need I say more? 

Yeah, baaaasically heaven on earth. Did I mention the chocolate + peanut butter combo? Mmmmhm. Yeah. Pretty much the only food combo I love other than avocado and toast. 

There are honestly so many great things I could say about this recipe, but I’ll try to limit it to 5. 

  1. These only require 6 ingredients.
  2. They are NO BAKE. 
  3. You get a boost of plant-based protein and fiber from the quinoa.
  4. If you don’t like the taste of quinoa, DON’T WORRY, because you can’t taste it!! HA!
  5. Chocolate and peanut butter. Enough said, honestly.

I can’t take the credit for this recipe, I totally found like 4 versions of it on Pinterest, like here, herehere, aaaaand here. Check ’em out to see the twists that other people put on them, or keep scrolling down to see how I threw mine together! 

I ended up going off of the first linked recipe above, but halved the batch because like, I’m feeding a huuuge house of one. I don’t really need 500 cookies sitting in my kitchen, trust me – I do NOT have that self control. 

I’ve stored mine in the freezer and LOVE the consistency they have, but they would save well in the fridge for up to a week as well. Good luck letting them last a week though, because if you’re anything like me, they’ll probably be gone in two days. 

Feel free to sub in the nut butter of your choice, whether it be peanut, almond, cashew, sunflower, or whatever. I used peanut butter this time around, but almond butter would be delish! I also used tricolor quinoa as it’s what I had on hand, but go crazy with any color…doesn’t matter. 

3/29/2018 EDIT: OKAY. I just made these again for the first time in months, and guys, you HAVE to sprinkle with sea salt at the very end. The sweet and savory mix will take your tastebuds to another planet. I also cut back on the honey (used to be 1/4 cup, I cut it back to 2 tablespoons). These are still some of the best, chocolatey cookies I’ve ever tasted.

I go to bed at night thanking God for giving me such a fun, quirky and unexpected way to reach so many people, and I wouldn’t trade it for anything.
