Is cod a regular on your weekly meal rotation? If not, don’t sleep on it!! Cod is a great source of protein (20 grams in a serving the size of your plam), as well as an excellent food source of vitamin B12, choline, selenium, and iodine — all nutrients your body requires for optimal functioning. Cod is a flaky white fish that tastes light and refreshing, with no fishy taste.

We love getting ours from Sizzle Fish (you can use the code FOODFITNESSANDFAITH to save 10% on your first order!). It gets sent to you frozen in individual portions, and you simply transfer it to the fridge the day of to let it thaw. It’s super high quality and has the best flavor! I was skeptical of ordering fish online and having it shipped to me, but I trust it so much more than I do getting it from the grocery store down the street. Definitely check them out!

We also used another favorite in this meal, the Mustard and Tarragon Rub from a local spice company, Spicewalla. I can’t even begin to describe how much we love all of their spices. Spices are the single best way to amp up the flavor profile of any dish, and investing in some high quality spices and seasoning blends is one of my top recommendations if you want to enjoy cooking and eating at home more. We make sure our pantry is always stocked!! You can visit their website and, you guessed it: use code FOODFITNESSANDFAITH for 10% off your first order! I advise you to stock up 😉 We also love the Honey and Herb Rub, the Garlic and Herb Rub, the Cracked Coriander and Pepper seasoning, and the Cowboy Steak Rub.

If you are in a pinch and want to make this ASAP and don’t have time to get the spices, you can mix up your own blend of garlic, sea salt, yellow mustard powder, coriander, tarragon, black pepper, parsley, and some dill weed. So many good flavors. I feel like this would be Ina Garten’s JAM.

You can easily throw this meal together in under 30 minutes…perfect for a busy weeknight, or an evening you just don’t want to put in much effort but still wanna eat well.

Throw the cod fillets into a baking dish with some olive oil, cherry tomatoes, chopped garlic, and lemon slices then seasoning with salt, pepper and the mustard and tarragon seasoning. Bake for 20 minutes, and it’s done! While the cod bakes, you can also roast some veggies on the side, and make a pot of quinoa or rice to serve alongside it. Don’t want quinoa or rice? I think some mashed cauliflower would be tasty, too!

Anticipate obstacles: obstacles are like red lights on the way to the store: an inevitable part of the journey. Anticipate them and don’t let them define your ability or stop you from trying.

Take action: you can absorb all the information and education you want, but that’s not what leads to change — taking ACTION is!! Regardless of the results, taking action helps you gain clarity to continue pressing forward. I know this can bring discomfort, but temporary discomfort is better than longterm discomfort. God is mighty in you — you GOT this!

Ditch all or nothing thinking: we believe something is better than nothing and ANY effort counts. You don’t have to implement 100% of the content to see change and improvements in your health. Each action you take compounds. 40% effort is better than 0%

Ask questions: if you’re confused, not sure where to start, feeling behind, or just have a question for me or the group, ask it! Someone else probably has the same question, so by speaking up you’re getting the answer and helping someone else do the same.
