Sweets are a rarity in my kitchen. Why? Because baking is much easier to screw up than cooking!! And I honestly don’t love spending money on ingredients to bake with when I could be spending that money on other things…especially when my baking track record isn’t exactly stellar to begin with. I also have a pretty tight food budget, so if it comes down to spending $10 on chicken for my lunches or $10 on chocolate and flour to make brownies, I’m choosing the chicken. And besides, in Asheville there are legitimately SO many incredible dessert spots that I’d much rather have something from than whatever lackluster creation I might or might not completely mess up in my own kitchen. Ya feel?

….Everyyyy once in a while though I end up throwing together an absolute goldmine. This NO-BAKE Chocolate Tahini Freezer Fudge is one of those said goldmines. It requires NO baking, so that takes away half the struggle right off the bat. It also requires just 5 simple ingredients and only has like, 3 total steps. All you need is a loaf pan, some parchment paper, a mixing bowl, spoon and a knife. Pretty elementary stuff.

If you’ve never had tahini before, it’s just ground up sesame seeds — very similar to peanut butter, but with a slightly different (not as sweet) taste. If looking for it in the grocery store, check by the nut butters, olives, or ethnic section! Or, you can order on amazon, because hello 2018.

You’re probably thinking, ‘OK CLARA. Why are you making a sweet dessert recipe with something that isn’t even sweet???”. For this specific recipe I used a chocolate tahini which actually does have some sugar added to it. However, if you can’t find chocolate tahini or don’t want the added sugar, the recipe will turn out just as delicious (and still sweet) if you decide to use regular tahini.

For best results, store the final product in the freezer until ready to eat. If you let it sit out on the counter, or even in the fridge, it will begin to slightly melt. I take a square out of the freezer just a minute or two before I want to eat it and it’s the perfect consistency!
