Daily Deliciousness: Boom Roasted

I don’t watch The Office, but if the title fits then…I’ll use it. One of the first meals I ever (consistently) made when I had my own kitchen junior year was roasted veggies. Any type, really. Broccoli, brussels sprouts, sweet potato, asparagus, carrots, zucchini, yellow squash…you get the picture. Something I had never done was add in apples to the mix. Life changing, honestly. This past week I made a big batch of roasted sweet potato + Honeycrisp apple (the BEST) + dried cranberries to have in the fridge for days or nights that I was too lazy or busy to cook.

This seriously might have been one of the best batches of roasted veggies I’ve made, and it doesn’t get any easier than this, I promise! Prep time only took me about 5 minutes, I actually had to wait on the oven to finish preheating! If you don’t have, can’t find, or don’t like Honeycrisp apples, you can also try Granny Smith or Pink Lady (a close second favorite of mine).

Cinnamon Roasted Sweet Potato & Honeycrisp Apple
servings: 3-4

Ingredients:

1 large sweet potato
1 large Honeycrisp apple
1 tablespoon extra virgin olive oil
1 teaspoon cinnamon
1 teaspoon dried rosemary leaves
pepper, to taste
1/4 cup cranberries

1) Preheat oven to 425*F. Line a baking sheet with aluminum foil.
2) Wash sweet potato, apple, and cranberries.
3) Cut up and dice sweet potato and apple into roughly the same size. Transfer to medium size bowl.
4) Drizzle 1 tablespoon EVOO onto sweet potato and apple slices. Add cinnamon, dried rosemary, and pepper, and toss to coat.
5) Lay out sweet potato and apple onto the baking sheet lined with aluminum foil. Pop in the oven and allow to bake for 15-20 minutes.
6) 15-20 minutes in, add in 1/4 cup of cranberries to baking sheet. Finish baking for 15-20 more minutes.
7) Safely remove baking sheet from oven, eat and enjoy!

I cut up my sweet potato and apple into about 1 inch pieces (or roughly the same size as tater tots…). Also, I actually used dried cranberries and they toughened up and were practically inedible, therefore I would advise using fresh cranberries. OR throw in the dried cranberries for the last 2 minutes, just to get warm. Whatever works! This would also be great mixed in with some quinoa. I had it on top of a spinach salad  and it was good as well. I may be biased, but I don’t think you can go wrong with this.

God is mighty in you — you GOT this! 

Ditch all or nothing thinking: we believe something is better than nothing and ANY effort counts. You don’t have to implement 100% of the content to see change and improvements in your health. Each action you take compounds. 40% effort is better than 0%

Ask questions: if you’re confused, not sure where to start, feeling behind, or just have a question for me or the group, ask it! Someone else probably has the same question, so by speaking up you’re getting the answer and helping someone else do the same.
