Daily Deliciousness: Pimento Cheese Burger

On July 8th I tweeted that I wanted a pimento cheese burger. After 54 days (I counted), I finally satisfied that craving…and even made it semi healthy! After looking up pimento cheese recipes on a number of different websites, I got a feel for the basic ingredients. I don’t have the patience for extremely detailed recipes, so I ended up crafting up my own easy and simple recipe with only THREE ingredients so pretty much anyone can make it. 

As for the burger, I used 93% lean ground turkey, seasoned it with pepper and lemon and garlic Mrs. Dash seasoning, then threw it on my new George Foreman grill (thanks, mom!!) for 6-7 minutes until it was cooked. I toasted up a sandwich thin, topped it with a tomato slice, red onion, pickles, ketchup, the turkey burger, and a nice spread of my pimento cheese. #SouthernLiving at its finest. Recipe below!

3 Ingredient Healthified Pimento Cheese
servings: 8 1/4 cup

Ingredients:
1 5.3 oz container Oikos plain greek yogurt
1 pack kraft fat free shredded cheddar cheese (7 1/4 cup servings)
1 4 oz container diced pimentos, drained 
pepper to taste

1) Empty yogurt into medium size bowl.
2) I personally didn’t think the cheese was shredded enough, so I emptied it onto a cutting board and sliced it up a bit until the shreds were smaller before adding it into the bowl with the yogurt.
3) Drain the diced pimentos until the majority of the juice is gone, then add into the bowl with the other ingredients.
4) Fold all ingredients together, adding in pepper if desired, until everything is well incorporated.
5) I used my pimento cheese as a topping for my turkey burger, but the options are endless.

Regardless of the results, taking action helps you gain clarity to continue pressing forward. I know this can bring discomfort, but temporary discomfort is better than longterm discomfort. God is mighty in you — you GOT this! 

Ditch all or nothing thinking: we believe something is better than nothing and ANY effort counts. You don’t have to implement 100% of the content to see change and improvements in your health. Each action you take compounds. 40% effort is better than 0%

Ask questions: if you’re confused, not sure where to start, feeling behind, or just have a question for me or the group, ask it! Someone else probably has the same question, so by speaking up you’re getting the answer and helping someone else do the same.
