In the spirit of keeping things real on here, I’m sharing with you one of my newest go-to weeknight dinner spreads. I’ve deemed it the “Easy Weeknight Burger Nachos” and it is honestly one of my better creations…in my humble opinion.

Now, it really isn’t much of a recipe as it is just combining a few very simple ingredients together. But sometimes those are the best, right?

It’s relatively straightforward, so no real need to explain much. You can of course use ground venison, ground turkey, or ground bison in place of the beef. Same with the potatoes — feel free to use regular potatoes in place of sweet potatoes.

In this instance, our kitchen wasn’t fully stocked with all the ideal burger toppings I would’ve liked to have, but it’s hard to beat pickles, ketchup, and mustard!! Feel free to stack on avocado slices, cooked bacon, a nice lil spicy mayo action, or some sliced lettuce if that makes you feel better about this meal.

…but lettuce or not, it’s a meal that is loaded with nutrition and flavor. No need to fear the meat and potatoes when you’re focusing on high quality sourcing (and combine it with other health promoting lifestyle choices!)

The recipe below makes roughly 4 servings, so feel free to scale up or down as needed. If cooking for one, I just make a big batch and eat on it throughout the week. Because there’s nothing better than cooking once and eating multiple times, especially during a busy week.

Easy Weeknight Burger Nachos

These Easy Weeknight Burger Nachos make for a super easy weeknight meal with simple, minimal ingredients the whole fam will love!

Cook Time 40 minutes
Total Time 50 minutes
Servings 4 people

Ingredients
  

  • 1 1/4 lb grass fed ground beef
  • 2 large sweet potatoes, sliced
  • 1-2 tbsp avocado oil
  • 1 small red onion, diced or thinly sliced
  • pickles, as desired
  • ketchup, as desired
  • mustard, as desired
  • salt and pepper, to taste
  • garlic granules, to taste
  • dried dill weed, to taste

Instructions
 

  • Start by preheating oven to 425F and line a baking sheet with parchment paper. Thinly slice sweet potatoes and lay out on the baking sheet. Drizzle with avocado oil, season with salt, pepper, garlic, and dill then toss to coat. Roast in the oven for 35-40 minutes, tossing halfway, or until cooked as desired.
  • When potatoes have about 10 minutes left, cook ground beef in a skillet over medium heat, using a wooden spatula to break up as it cooks. If you're using leaner ground beef (such as 93/7), I suggest cooking in some fat/oil to improve flavor. Season as desired with salt, pepper, and garlic.
  • Assemble nachos by starting with a layer of sweet potatoes then finish off with a serving of ground beef, sliced pickles, diced red onion, ketchup, mustard, and any other toppings you fancy (i.e. avocado, mayo, lettuce, bacon). Enjoy!

Notes

"As desired" means to measure with your heart. I rarely measure spices and seasonings when I'm cooking, and when it comes to toppings like ketchup and mustard....the more the merrier in my book 🙂
