These Cod and Peach Salsa Lettuce Wraps are without a doubt one of the most refreshing summer meals you could make. I loved them so much, I ended up making them two nights in a row since I had a good amount of leftover peach salsa! The light and flaky cod paired so well with the cold, refreshing salsa. I guarantee you’ll feel like you’re dining at a fancy beach resort with these in front of you 😉

Wary of buying fish at the grocery store?

…or just flat out not sure what to look for? I used to be that way as well! I’d finally branch out and buy fish, only to find it had a stale, super fishy taste or smell despite being labeled “fresh”. Y’know what I’m talking about? It’s really one of those things you just can kinda trust your gut with. Not the most appetizing aroma, which is a shame since good quality fish is such a nutrient-dense food and protein source!

Thankfully, a few years ago I heard of a company called Sizzlefish, and our seafood game has changed for the better. It’s an online subscription that you can order high-quality fish and seafood from, then have it shipped for free to your doorstep frozen and vacuum-sealed in individual portion packets.

If you’re like uhh but IDK about fish being shipped to me — won’t it go bad? No! We’ve received a handful of shipments over the last few years, and they’ve never once been bad…all still very much frozen, (thanks to being packaged with dry ice), and without a doubt much more “fresh” tasting and looking than what I could find at the stores in my area.

Also, did you now that frozen fish can actually be more fresh than the “fresh” fish at the grocery store?? Freezing fish shortly after it’s been caught preserves the freshness, so you can enjoy peak flavor whenever ya want! Similar to buying frozen broccoli versus fresh broccoli — we don’t always know how long the “fresh” broccoli has been sitting on the shelf, or how long it was in transport to the store since it was picked. We know if we want to have some fish for dinner, we just transfer it from the freezer to the fridge the night before, or even the morning of and it’s good to go!

What about the quality of the fish?

Most of what Sizzlefish offers is wild-caught varieties, though some are farm-raised. I usually recommend wild-caught options, but after reading more and doing my own research (team openminded and always learning), I have no problems with farm-raised fish — it really all depends on how the fish is handled and cultivated, and the overall sustainability of the practices used. The quality of both wild-caught and farm-raised fish will vary widely! Basically, you can have high quality wild-caught or poor-quality wild-caught, and high-quality farmed or low-quality farmed. Sizzlefish provides high-quality of both. Two thumbs up from me!

I’ve had a handful of seafood offerings from Sizzlefish over the years, and it has all been so. consistently. delicious. I truly don’t know how they do it.

The scallops? AMAZING — we love using them for a fancy date night at home served with mashed cauliflower and roasted asparagus.
The salmon? Spectacular — we love topping it with a generous serving of Spicewalla Honey and Herb Rub and roasted it in the oven.
The shrimp? Easy peasy — we love to sear ’em in the cast iron to make a quick meal of shrimp tacos.

What’s so good about fish?

Fish is an incredibly nutrient-dense food that most of us aren’t eating enough of! It’s a highly bioavailable source of protein (meaning our bodies can utilize it very easily) and is full of nutrients like B vitamins (crucial for converting your food into useable energy!), vitamin D, phosphorus, potassium, zinc, and healthy omega 3 fats (see ya, inflammation). Tired of chicken, turkey, beef, or pork? Fish offers some much needed variety, and there are many different varieties of fish and seafood to choose from, such as:

Cod and Peach Salsa Lettuce Wraps

These Cod and Peach Salsa Lettuce Wraps, using the highest quality fish from Sizzlefish, are the perfect light, refreshing meal!

Servings 2 people

Ingredients
  

Baked Cod

  • 2 filets frozen cod, thawed we used some from Sizzlefish!
  • juice of 1 lime
  • Sea salt and ground pepper, to taste

Peach Salsa

  • 1 medium peach, diced
  • 2 medium tomatoes on the vine, diced
  • 1 medium ripe avocado, diced
  • 1/4 small red onion, finely diced
  • 1 medium jalapeno, finely diced
  • juice of 1 lime
  • 1 clove garlic, minced
  • Sea salt and ground pepper, to taste

Additional Ingredients

  • 6-8 leaves butter lettuce, to serve in
  • 1 lime, to garnish

Instructions
 

Peach Salsa

  • Wash and chop all salsa ingredients and combine together in a large box. Gently stir to combine. For best flavor, make ahead of time to allow flavors to marry together.

Baked Cod

  • Preheat oven to 400F and line a baking sheet with parchment paper. Lay cod filets on top, drizzle with extra virgin olive oil, lime juice, and season with salt and pepper. Bake in the oven for 10-12 minutes or until cod flakes easily with a fork, and is opaque in color. Gently flake fish with a fork.

Assembly

  • Evenly divide the flaked cod between the lettuce wraps and serve each topped with a generous spoonful of peach salsa and extra squeeze of lime.

Notes

You could also cook the fish on the grill or on the stove, whichever method you prefer.
